Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 cup water

Vegetable oil, for frying

For the Honey Garlic Sauce:

1/2 cup honey

3 cloves garlic, minced

1/4 cup soy sauce

1 tbsp rice vinegar

1 tbsp sesame oil

1 tsp grated fresh ginger

1 tsp cornstarch mixed with 2 tsp water (slurry for thickening)

Instructions

Prepare the Chicken:

    - In a large bowl, combine flour, cornstarch, baking powder, salt, black pepper, garlic powder, and onion powder. Mix well.

      - Add the chicken pieces to the bowl and coat them evenly with the dry mixture. Slowly add the water, mixing until the batter is thick but smooth.

        Heat the Oil:

          - In a deep frying pan or wok, heat about 1-2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small amount of the batter; it should sizzle upon contact.

            Fry the Chicken:

              - Carefully drop the coated chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry in batches for 5-7 minutes until golden brown and crispy. Use a slotted spoon to remove the chicken and drain on paper towels.

                Make the Honey Garlic Sauce:

                  - In a saucepan over medium heat, combine honey, minced garlic, soy sauce, rice vinegar, sesame oil, and grated ginger. Stir frequently until heated through.

                    - Bring the sauce to a gentle simmer, then add the cornstarch slurry, stirring until it thickens (about 1-2 minutes). Remove from heat.

                      Combine and Serve:

                        - In a large mixing bowl, combine the crispy chicken with the honey garlic sauce and toss well to coat.

                          - Serve hot, garnished with sliced green onions or sesame seeds if desired. Enjoy!
