Crispy Bang Bang Salmon Bites (Sweet & Spicy)

Ingredients
  

1 lb fresh salmon fillet, skinless and deboned

1 cup panko breadcrumbs

1/2 cup flour (all-purpose)

2 large eggs

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp smoked paprika

Salt and pepper, to taste

Oil for frying

Bang Bang Sauce:

1/3 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust for spice level)

1 tsp honey

1/2 tsp lime juice

Green onions, sliced (for garnish)

Instructions
 

Prep the Salmon: Cut the salmon fillet into bite-sized cubes, approximately 1-inch pieces. Pat them dry with a paper towel and season with salt and pepper.

    Set Up Breading Station: In one bowl, place the flour mixed with garlic powder, onion powder, and smoked paprika. In a second bowl, whisk the eggs. In a third bowl, add the panko breadcrumbs.

      Coat the Salmon: Dredge each salmon piece in the flour mixture, shaking off any excess. Dip it into the egg, letting any excess drip off, then coat it in the panko breadcrumbs, pressing gently to adhere.

        Fry the Salmon Bites: Heat oil in a deep skillet or frying pan over medium heat. Once hot, carefully add the salmon bites in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

          Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Mix well until creamy and smooth.

            Serve: Arrange the crispy salmon bites on a serving platter. Drizzle the bang bang sauce over the bites or serve it on the side for dipping. Garnish with sliced green onions for a refreshing touch.
