Crispy Bang Bang Salmon Bites

Pair these golden bites with a spicy Bang Bang sauce that combines creamy mayonnaise, sweet chili, and a kick of sriracha for an explosion of flavor. Ingredients
  

1 lb salmon fillet, skinless and boneless

1 cup panko breadcrumbs

½ cup flour

2 large eggs

½ tsp garlic powder

½ tsp onion powder

½ tsp paprika

Salt and pepper, to taste

Oil, for frying

Bang Bang Sauce:

½ cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust for heat preference)

1 tsp lime juice

1 tsp honey

Instructions
 

Prepare the Salmon: Cut the salmon into bite-sized cubes, about 1 inch. Season with salt and pepper.

    Set Up Breading Station: In three separate bowls, place the flour mixed with garlic powder, onion powder, paprika, and a pinch of salt in one bowl. In the second bowl, beat the two eggs. In the third bowl, place the panko breadcrumbs.

      Coat the Salmon: Dip each salmon bite first in the flour, ensuring it's well coated. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat each piece in panko breadcrumbs, pressing lightly to adhere.

        Fry the Bites: In a large skillet, heat about ½ inch of oil over medium-high heat. Once the oil is hot, carefully add the panko-coated salmon bites in a single layer. Cook for about 3-4 minutes per side until they are golden brown and crispy. Avoid overcrowding the pan; you may need to do this in batches.

          Make the Bang Bang Sauce: While the salmon bites are frying, combine the mayonnaise, sweet chili sauce, sriracha, lime juice, and honey in a small bowl. Mix well until smooth.

            Serve: Once the salmon bites are done, transfer them to a paper towel-lined plate to absorb excess oil. Serve hot with the Bang Bang sauce on the side for dipping.
