Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tablespoon garlic powder

1 tablespoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Vegetable oil, for frying

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon honey (optional)

Chopped green onions and sesame seeds for garnish

Instructions

Marinate the Chicken: In a bowl, combine the chicken pieces with buttermilk. Let it marinate in the refrigerator for at least 30 minutes to enhance tenderness and flavor.

Prepare Coating Mixture: In a separate bowl, mix together the flour, cornstarch, garlic powder, paprika, salt, and black pepper until well combined.

Heat Oil: In a large skillet or deep fryer, heat vegetable oil over medium-high heat. You'll need about 2 inches of oil for frying.

Coat the Chicken: Remove the marinated chicken from the buttermilk. Dredge each piece in the flour mixture, shaking off any excess flour.

Fry the Chicken: Once the oil is hot (about 350°F), carefully add the coated chicken pieces in batches. Fry until golden brown and crispy, about 5-7 minutes, flipping halfway through. Transfer to a paper towel-lined plate to drain excess oil.

Make Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and honey (if using) until smooth and creamy.

Serve: Toss the crispy chicken in the Bang Bang sauce or serve it drizzled on top. Garnish with chopped green onions and sesame seeds for an extra crunch and flavor.

Enjoy: Serve the crispy Bang Bang chicken with your favorite side dishes, like jasmine rice or a fresh salad!
