Ingredients

1 lb flank steak, sliced against the grain

2 tablespoons olive oil

2 teaspoons garlic powder

2 teaspoons smoked paprika

1 teaspoon salt

1 teaspoon black pepper

1 cup cooked rice (white, brown, or jasmine)

1 cup black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 avocado, sliced

1 cup corn (fresh, canned, or frozen)

1/2 cup shredded cheese (cheddar or cotija)

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional toppings: sour cream, salsa, or hot sauce

Instructions

Marinate the Steak: In a bowl, combine olive oil, garlic powder, smoked paprika, salt, and black pepper. Add the flank steak and massage the marinade into the meat. Cover and let it marinate in the fridge for at least 30 minutes (or up to overnight for the best flavor).

Cook the Steak: Preheat a grill or skillet over medium-high heat. Once hot, add the marinated flank steak. Cook for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove from heat and let it rest for 5-10 minutes before slicing.

Prepare the Bowl Base: While the steak is resting, prepare your base. In a bowl, start with a generous serving of cooked rice.

Add the Toppings: Layer on the black beans, cherry tomatoes, corn, and sliced avocado atop the rice.

Slice the Steak: After resting, slice the steak against the grain into thin strips and place it on top of the bowl.

Finish with Cheese and Herbs: Sprinkle shredded cheese and chopped cilantro over the entire bowl.

Serve with Lime: Squeeze fresh lime juice over the bowl for an extra burst of flavor.

Optional Toppings: For added zest, consider drizzling some sour cream, salsa, or your favorite hot sauce on top.
