Creamy Mushroom and Asparagus Chicken Penne

8 oz penne pasta

1 lb boneless, skinless chicken breasts, diced

1 cup fresh asparagus, trimmed and cut into 1-inch pieces

1 cup mushrooms, sliced (cremini or button)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

¾ cup grated Parmesan cheese

2 tbsp olive oil

Salt and pepper, to taste

½ tsp crushed red pepper flakes (optional)

Fresh parsley, chopped for garnish

Instructions
 

Cook the Penne: In a large pot of salted boiling water, cook the penne pasta according to package directions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat 1 tablespoon of olive oil. Season the diced chicken with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add another tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the garlic and cook for an additional minute until fragrant.

        Add Mushrooms and Asparagus: Add the sliced mushrooms and asparagus pieces to the skillet. Sauté until the mushrooms release their moisture and start to brown, about 5-6 minutes.

          Make the Cream Sauce: Reduce the heat to low, then stir in the heavy cream and Parmesan cheese. Allow the mixture to simmer gently, stirring frequently, until the cheese has melted and the sauce is creamy. Season with salt, pepper, and crushed red pepper flakes if using.

            Combine Ingredients: Add the cooked chicken and drained penne to the skillet, tossing everything together until the pasta is well coated with the creamy sauce. Cook for an additional 2-3 minutes to heat through.

              Serve: Garnish with freshly chopped parsley and additional Parmesan cheese if desired. Serve warm and enjoy!
