4 cups ripe tomatoes, chopped (use a mix of varieties for depth)

1 large onion, diced

3 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

2 cups vegetable broth

1 tablespoon olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for a kick)

1 cup heavy cream or coconut cream for a vegan option

Salt and pepper to taste

Fresh basil leaves for garnish

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Cook for about 5-7 minutes until the vegetables are soft and the onions are translucent.

    Add Garlic and Tomatoes: Stir in the minced garlic and sauté for another minute until fragrant. Add the chopped tomatoes, vegetable broth, dried basil, oregano, and red pepper flakes (if using). Bring the mixture to a simmer.

      Cook Soup: Let the soup simmer uncovered for about 20-25 minutes, allowing the flavors to meld and the tomatoes to break down. Stir occasionally.

        Blend for Creaminess: Using an immersion blender, partially blend the soup while still leaving some chunky pieces, or you can transfer half of the soup to a blender and blend until smooth, then return it to the pot.

          Add Cream: Stir in the heavy cream or coconut cream and let it warm through for a few minutes. Season with salt and pepper to taste.

            Serve: Ladle the soup into bowls and garnish with fresh basil leaves. Enjoy with crusty bread or grilled cheese on the side!
