Creamy Chicken Sausage Orzo Skillet

Ingredients
  

1 pound chicken sausage, sliced (mild or spicy based on preference)

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 cup uncooked orzo pasta

4 cups chicken broth (low-sodium)

1 cup heavy cream

1 cup spinach, packed (fresh or frozen)

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions
 

Heat the skillet: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.

    Sauté vegetables: In the same skillet, add diced onions and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for another 1-2 minutes until fragrant.

      Cook the orzo: Stir in the uncooked orzo pasta, and toss it with the onions and garlic for about 1 minute to toast slightly.

        Add broth: Pour in the chicken broth and bring to a boil. Reduce the heat to a simmer and let it cook for about 10-12 minutes, stirring occasionally, until the orzo is al dente and the liquid has mostly absorbed.

          Make it creamy: Lower the heat and stir in the heavy cream, cooked chicken sausage, spinach, cherry tomatoes, Italian seasoning, and grated Parmesan cheese. Cook for an additional 3-5 minutes, until everything is heated through and the spinach has wilted. Season with salt and pepper to taste.
