Creamy Cauliflower Mash

Ingredients
  

1 large head of cauliflower, chopped into florets

1 cup milk (or almond milk for a dairy-free option)

4 tablespoons unsalted butter (or olive oil for a vegan option)

2 cloves garlic, minced

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon ground nutmeg

1/4 cup grated Parmesan cheese (optional)

Fresh chives or parsley for garnish

Instructions
 

In a large pot, bring salted water to a boil. Add the cauliflower florets and cook until tender, about 10-12 minutes.

    Drain the cauliflower well and let it cool for a few minutes.

      In the same pot, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

        Add the drained cauliflower back to the pot. Pour in the milk, and add the salt, black pepper, and nutmeg.

          Use an immersion blender or a food processor to blend the cauliflower mixture until smooth and creamy. If you prefer a chunkier texture, blend less.

            If using, stir in the grated Parmesan cheese until melted and incorporated.

              Taste and adjust seasoning as needed. Serve hot, garnished with chopped chives or parsley.
