Creamy Cajun Chicken Pasta

12 oz fettuccine or penne pasta

1 lb boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or penne pasta according to the package instructions until al dente. Drain and set aside.

    Prepare the Chicken: Season the chicken breasts on both sides with Cajun seasoning. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes on each side until cooked through and golden brown. Remove from the skillet, let rest for a few minutes, and then slice into strips.

      Sauté Vegetables: In the same skillet, add the diced onion and sliced red bell pepper. Sauté for about 3-4 minutes until soft. Stir in the minced garlic and cook for an additional 1 minute.

        Make the Sauce: Pour in the chicken broth and heavy cream, scraping the bottom of the skillet to release any browned bits. Bring to a simmer and let cook for about 5 minutes, allowing the sauce to thicken.

          Add Cheese & Combine: Reduce the heat to low and stir in the grated Parmesan cheese until melted and smooth. Season the sauce with salt and pepper to taste.

            Combine Pasta & Chicken: Add the cooked pasta and sliced chicken to the skillet, tossing everything together until well coated in the creamy sauce. Heat through for an additional 2-3 minutes.
