4 chicken thighs (boneless and skinless)

1/2 cup unsalted butter, softened

4 cloves garlic, minced

1 tablespoon smoked paprika

1 teaspoon chili powder

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Cowboy Butter: In a medium mixing bowl, combine softened butter, minced garlic, smoked paprika, chili powder, oregano, thyme, onion powder, salt, and black pepper. Mix until well combined and creamy. Set aside.

    Cook the Chicken: Preheat a large skillet over medium heat. Add a tablespoon of oil (olive oil or vegetable oil) to the skillet. Season the chicken thighs with a sprinkle of salt and pepper on both sides.

      Sear the Chicken: Place the chicken thighs in the hot skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through (the internal temperature should reach 165°F or 75°C). Remove the chicken from the skillet and keep warm.

        Melt the Cowboy Butter: In the same skillet, reduce the heat to low and add half of the prepared cowboy butter. Allow it to melt and bubble slightly, scraping any brown bits from the bottom of the pan.

          Glaze the Chicken: Return the cooked chicken thighs to the skillet, and spoon the melted cowboy butter over the top. Cook for an additional 1-2 minutes, allowing the chicken to soak up the flavors.

            Garnish and Serve: Remove the skillet from heat. Transfer the chicken to a serving platter, drizzle with any remaining cowboy butter from the pan, and garnish with chopped parsley. Serve with lemon wedges on the side.
