2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 cup granulated sugar, divided

1 teaspoon ground cinnamon, divided

1/2 teaspoon ground nutmeg

3 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, melted and slightly cooled

1 cup whole milk

2 large eggs

1 teaspoon vanilla extract

1/2 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Instructions
 

Prepare the Apples: In a medium bowl, toss the diced apples with 1/4 cup of granulated sugar and 1/2 teaspoon of cinnamon. Set aside to let them macerate for about 15 minutes.

    Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or non-stick spray.

      Mix the Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, remaining 3/4 cup sugar, remaining 1/2 teaspoon cinnamon, and nutmeg.

        Combine Wet Ingredients: In another bowl, mix the melted butter, whole milk, eggs, and vanilla extract until well combined.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be thick.

            Fold in Apples: Gently fold in the macerated apples with their juices into the batter.

              Bake the Bread: Pour the batter into the prepared loaf pan, smoothing the top. Bake in the preheated oven for 60-70 minutes or until a toothpick inserted in the center comes out clean. If the top browns too quickly, you can cover it with aluminum foil during the last 15 minutes of baking.
