2 cups cottage cheese

1 large cucumber, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Optional: 1/4 cup crumbled feta cheese

Instructions
 

In a large mixing bowl, combine the cottage cheese, diced cucumber, halved cherry tomatoes, and chopped red onion.

    Add the fresh dill, olive oil, and lemon juice to the mixture. Toss everything together gently until well combined.

      Season with salt and pepper to taste. If you like a bit more flavor, sprinkle in the crumbled feta cheese and mix again.

        Let the salad sit in the refrigerator for about 15–30 minutes to allow the flavors to meld together.

          Serve chilled and enjoy your refreshing salad on its own or as a side dish!
