Classic Southern Peach Cobbler

6 cups fresh peaches, sliced (or 4 cups canned peaches, drained)

1 cup granulated sugar, divided

1 teaspoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1 cup all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon salt

1 cup milk

½ cup unsalted butter, melted

1 teaspoon almond extract (optional)

Prepare the Peaches: In a large mixing bowl, combine the sliced peaches with ½ cup of sugar, lemon juice, vanilla extract, cornstarch, cinnamon, and nutmeg. Gently toss to coat and set aside to marinate for about 30 minutes.

    Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray.

      Make the Batter: In another bowl, whisk together the flour, remaining ½ cup of sugar, baking powder, and salt. Slowly stir in the milk and melted butter until just combined. If you wish to add a hint of almond flavor, include the almond extract.

        Assemble the Cobbler: Pour the batter into the greased baking dish, but do NOT mix it with the peaches. Instead, spoon the peach mixture evenly over the top of the batter. The batter will rise around the peaches while it bakes.

          Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes or until the top is golden brown and a toothpick inserted into the batter comes out clean.

            Cool and Serve: Let cool for about 15 minutes before serving. Best enjoyed warm, topped with a scoop of vanilla ice cream or fresh whipped cream.
