Cinnamon Sugar French Toast Muffins

6 slices of thick bread (such as brioche or challah)

3 large eggs

1 cup whole milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup melted butter

1 tablespoon granulated sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions
 

Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing it with cooking spray or butter.

    In a large mixing bowl, tear the slices of bread into small bite-sized pieces (about 1-inch cubes). Place them in the muffin tin, filling each cup about halfway.

      In a separate bowl, whisk together the eggs, whole milk, vanilla extract, 1 teaspoon cinnamon, and 1/4 teaspoon salt until well combined.

        Pour the egg mixture evenly over the bread cubes in each muffin cup, pressing down gently to ensure the bread absorbs the liquid. Let the mixture sit for about 10 minutes, allowing the bread to soak up the custard.

          In a small bowl, combine the 1/4 cup granulated sugar, brown sugar, melted butter, and the remaining 1 teaspoon of cinnamon. Mix until it forms a crumbly texture.

            Sprinkle the cinnamon sugar mixture over each muffin cup, distributing it evenly.

              Bake in the preheated oven for about 18-20 minutes, or until the muffins are golden brown and set in the center.

                Remove from oven and allow to cool slightly before using a butter knife to gently lift the muffins out of the tin.

                  Combine 1 tablespoon of granulated sugar with 1 teaspoon of ground cinnamon in a small bowl and sprinkle over the warm muffins for an extra sweet touch.
