Chinese Beef and Broccoli

Ingredients
  

1 lb (450g) flank steak, thinly sliced against the grain

4 cups fresh broccoli florets

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon ginger, minced

1/4 cup low-sodium soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 tablespoon brown sugar

Cooked jasmine rice, for serving

Sesame seeds, for garnish

Sliced green onions, for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the sliced flank steak, soy sauce, oyster sauce, sesame oil, rice vinegar, and brown sugar. Mix well and let it marinate for at least 20 minutes while you prepare the rest of the ingredients.

    Blanch the Broccoli: Bring a pot of lightly salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes until vibrant green and slightly tender. Drain and immediately submerge in ice water to halt the cooking process. Drain again and set aside.

      Heat the Wok: In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.

        Cook the Beef: Push the garlic and ginger to the side of the wok, increase the heat, and add the marinated beef in a single layer. Allow it to sear for 1-2 minutes without stirring, then stir-fry until the beef is browned and cooked through, about 3-4 minutes.

          Add Broccoli and Sauce: Add the blanched broccoli to the wok. Stir in the cornstarch slurry to thicken the sauce slightly and combine everything well. Stir-fry for another 2 minutes until everything is heated through.

            Serve: Remove from heat and serve immediately over cooked jasmine rice. Garnish with sesame seeds and sliced green onions for a pop of color and flavor.
