2 cups elbow macaroni

1 lb ground beef or turkey

1 onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes

1 can (6 oz) tomato paste

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon onion powder

1 cup beef or vegetable broth

1 cup shredded sharp cheddar cheese

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent. Add the ground beef or turkey and cook until browned. Drain any excess fat.

      Combine Ingredients: To the meat mixture, stir in the chili powder, cumin, smoked paprika, onion powder, salt, and pepper. Add the diced tomatoes, tomato paste, kidney beans, black beans, and broth. Bring the mixture to a simmer.

        Mix in Pasta: Stir in the cooked macaroni, mixing well to ensure the pasta is coated with the chili mixture. Allow it to simmer for about 5-7 minutes, so the flavors meld together.

          Add Cheese: Remove the skillet from heat and stir in the shredded cheddar cheese until melted and creamy. Adjust seasoning as needed.
