2 packs of instant ramen noodles (discard seasoning packets)

1 lb (450g) boneless, skinless chicken thighs, sliced into strips

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 cup snap peas

1 cup shredded carrots

3 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional, for heat)

Sesame seeds, for garnish

Fresh cilantro, for garnish

Instructions
 

Cook the Noodles: Bring a pot of water to boil and cook the ramen noodles according to package instructions (usually about 3-4 minutes). Drain and set aside.

    Prepare the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken thighs and sauté for about 5-7 minutes, or until the chicken is cooked through and slightly golden.

      Add the Vegetables: Stir in the sliced red bell pepper, snap peas, shredded carrots, and the white parts of the green onions. Cook for another 5 minutes, stirring occasionally, until the vegetables are tender-crisp.

        Flavor It Up: Add the minced garlic and ginger to the skillet and sauté for about 30 seconds until fragrant.
