Chicken Chow Mein with The Best Chow Mein Sauce

For the Chicken and Vegetables:

1 lb (450g) boneless chicken breast, thinly sliced

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

2 cups chow mein noodles, cooked according to package instructions

1 cup broccoli florets

1 bell pepper (red or green), sliced

1 cup snow peas

1 small onion, sliced

2 cloves garlic, minced

1 inch ginger, minced

For the Best Chow Mein Sauce:

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sugar

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

Instructions
 

Marinate the Chicken: In a bowl, combine the sliced chicken with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Mix well and let it marinate for at least 15 minutes while you prepare the other ingredients.

    Make the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, rice vinegar, sugar, black pepper, and red pepper flakes until well combined. Set aside.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 4-5 minutes until the chicken is cooked through and golden brown. Remove the chicken from the pan and set aside.

        Sauté the Vegetables: In the same pan, add the remaining 1 tablespoon of oil. Add the onions, garlic, and ginger, cooking until fragrant (about 1 minute). Then, add the broccoli, bell pepper, and snow peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

          Combine Everything: Return the cooked chicken to the pan with the sautéed vegetables. Pour the prepared chow mein sauce over the mixture. Stir well to combine, letting everything heat through for another 2-3 minutes.

            Add the Noodles: Finally, add the cooked chow mein noodles to the skillet. Toss everything together gently until the noodles are well coated with the sauce and heated through.

              Serve: Serve hot, garnished with sesame seeds or sliced green onions if desired.
