1 can (400g) of mixed beans (kidney beans, black beans, pinto beans), drained and rinsed

1 medium onion, finely chopped

2 cloves of garlic, minced

1 tsp cumin seeds

1 tsp garam masala

1/2 tsp red chili powder (adjust to taste)

1/2 tsp turmeric powder

1 cup cheddar cheese, grated

2 tbsp olive oil

1 tbsp fresh coriander, chopped (for garnish)

4 slices of whole grain bread

Salt and black pepper to taste

Optional: lemon wedges for serving

Prepare the Toast: Begin by toasting the slices of whole grain bread until they are golden brown and crispy. Keep them warm.

    Cook the Aromatics: In a frying pan, heat the olive oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant. Then, add the finely chopped onion and sauté until translucent, about 5 minutes.

      Add Garlic and Spices: Stir in the minced garlic, followed by the garam masala, red chili powder, turmeric, salt, and black pepper. Cook for another minute until the spices are fragrant.

        Combine Beans: Add the drained and rinsed mixed beans to the pan. Stir well to coat the beans with the spice mixture. Allow them to cook for about 5-7 minutes, stirring occasionally, until heated through.
