Cheesy Beef Enchilada Tortellini

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 (10 oz) can enchilada sauce (red or green)

1 cup beef broth

1 package (9 oz) cheese tortellini

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 teaspoon chili powder

1 teaspoon ground cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for heat)

Instructions
 

In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease if necessary.

    Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

      Stir in the enchilada sauce, beef broth, chili powder, cumin, salt, and pepper. Bring the mixture to a simmer.

        Meanwhile, cook the cheese tortellini according to package instructions, usually boiling for about 3-5 minutes until they float to the top. Drain and set aside.

          Add the cooked tortellini to the skillet with the beef mixture. Stir gently to combine everything well.

            Sprinkle cheddar and mozzarella cheese evenly over the top of the mixture. Cover the skillet and let it cook for an additional 5-7 minutes, or until the cheese has melted and is bubbling.

              Remove from heat and garnish with chopped cilantro and sliced jalapeños if desired.
