Packed with tender Yukon gold potatoes, crispy bacon, sautéed onions, and colorful bell peppers, this hearty dish is perfect for brunch or a family breakfast. Topped with melty sharp cheddar and seasoned to perfection, it’s sure to please everyone. 6 medium-sized Yukon gold potatoes, diced

8 slices of thick-cut bacon, chopped

1 small onion, diced

1 red bell pepper, diced

2 cups shredded sharp cheddar cheese

6 large eggs

1 cup whole milk

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

1/4 cup chopped green onions (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove it from the skillet and drain on paper towels, reserving about 1 tablespoon of the bacon grease in the skillet.

      Sauté Vegetables: In the same skillet, add the diced onion and red bell pepper. Sauté for about 5 minutes or until softened. Remove from heat.

        Prep the Potatoes: In a large mixing bowl, combine the diced potatoes, sautéed onion, bell pepper, and crispy bacon. Stir in 1 1/2 cups of shredded cheese, garlic powder, paprika, salt, and pepper until well mixed.

          Make the Egg Mixture: In a different bowl, whisk together the eggs and milk, then season with salt and pepper.

            Combine: Pour the egg mixture over the potato and bacon mixture, stirring gently to combine.

              Bake: Transfer the mixture into a greased 9x13 inch baking dish. Top with the remaining 1/2 cup of shredded cheddar cheese. Bake in the preheated oven for 45-50 minutes or until the potatoes are tender and the top is golden brown.

                Serve: Remove from the oven, let it cool for a few minutes, and garnish with chopped green onions before serving.
