Carrot Cake Oatmeal

Ingredients
  

1 cup rolled oats

2 cups unsweetened almond milk (or any milk of choice)

1 medium carrot, grated

1/4 cup crushed pineapple (drained)

1/4 cup raisins (or chopped nuts if you prefer)

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon vanilla extract

2 tablespoons maple syrup (or honey)

A pinch of salt

Optional for topping: chopped walnuts, shredded coconut, or a dollop of Greek yogurt

Instructions
 

In a medium saucepan, combine the rolled oats, almond milk, grated carrot, and a pinch of salt. Stir well to combine.

    Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally to prevent sticking.

      Once the oatmeal starts to thicken (about 5-7 minutes), add in the crushed pineapple, raisins, cinnamon, nutmeg, vanilla extract, and maple syrup. Stir well to ensure everything is evenly mixed.

        Continue to cook for an additional 2-3 minutes, or until the oats are cooked to your desired creaminess.

          Once done, remove from heat and let it sit for a minute to cool slightly.
