Carrot Apple Salad

Ingredients
  

3 large carrots, grated

2 medium apples, cored and grated (preferably Granny Smith for tartness)

1/4 cup raisins or dried cranberries

1/4 cup walnuts, chopped

1/4 cup plain Greek yogurt

2 tablespoons honey or maple syrup

1 tablespoon lemon juice

1/2 teaspoon ground cinnamon

Pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and apples.

    Add the raisins (or dried cranberries) and chopped walnuts to the bowl, mixing gently to combine the ingredients.

      In a separate small bowl, whisk together the Greek yogurt, honey (or maple syrup), lemon juice, ground cinnamon, and a pinch of salt until smooth and well combined.

        Pour the dressing over the carrot and apple mixture, and toss gently until everything is evenly coated.

          Taste and adjust sweetness if needed, adding more honey or maple syrup to suit your preference.

            Refrigerate the salad for at least 30 minutes to allow the flavors to meld.

              Before serving, give it a light toss again, garnish with fresh mint leaves if desired, and serve chilled.
