Caramel Apple Oatmeal Bake

2 cups rolled oats

2 cups unsweetened almond milk (or milk of your choice)

2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/2 cup brown sugar, packed

1/4 cup maple syrup

1/3 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup chopped pecans or walnuts (optional)

1/2 cup caramel sauce (for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with non-stick cooking spray or butter.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. If using nuts, stir them in here as well.

      Prepare Wet Ingredients: In another bowl, whisk together the almond milk, brown sugar, maple syrup, melted butter, eggs, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet mixture over the dry ingredients, and stir until well combined. Gently fold in the diced apples.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish and spread it evenly.

            Bake: Bake in the oven for 35-40 minutes or until the top is golden brown and set in the middle. A knife should come out clean when inserted into the center.

              Cool and Drizzle: Once baked, allow the oatmeal bake to cool slightly in the dish. Drizzle caramel sauce over the top before serving.
