Burgers with Pimento Cheese

Ingredients
  

1 pound ground beef (80/20 blend for juiciness)

Salt and pepper, to taste

4 hamburger buns

1 cup pimento cheese (store-bought or homemade)

4 slices of crisp bacon (optional)

Lettuce leaves (for garnish)

Tomato slices (for garnish)

Pickles (for garnish)

Olive oil or butter (for toasting buns)

Instructions
 

Prepare the Pimento Cheese: If making your own, combine 1 cup shredded sharp cheddar cheese, ½ cup cream cheese, ¼ cup diced pimentos, 1 tablespoon mayonnaise, 1 teaspoon garlic powder, 1 teaspoon onion powder, and a dash of cayenne pepper in a bowl. Mix until smooth and creamy. Set aside.

    Form the Patties: Divide the ground beef into four equal portions and gently shape them into burger patties, making a slight indentation in the center to prevent them from puffing up while cooking. Season both sides generously with salt and pepper.

      Cook the Bacon (if using): In a skillet over medium heat, cook the bacon until crispy. Remove and place on paper towels to drain excess grease. Reserve the bacon fat in the skillet for cooking the burgers.

        Cook the Burgers: In the same skillet with reserved bacon fat or over medium-high heat, add a drizzle of olive oil or butter. Cook the burger patties for about 4-5 minutes on one side. Flip and cook for another 3-4 minutes for medium doneness, or until your desired doneness is reached.

          Assemble the Burgers: While the burgers are cooking, slice the hamburger buns in half and toast them on a separate pan or griddle until golden brown.

            Add the Pimento Cheese: Once the burgers are done, place a generous scoop of pimento cheese on top of each patty and cover with a lid for about a minute to let the cheese melt slightly.

              Build Your Burger: On the bottom half of each toasted bun, place a leaf of lettuce, followed by the burger with melted pimento cheese. Layer with crispy bacon (if using), tomato slices, and pickles. Top with the other half of the bun.

                Serve and Enjoy: Serve the burgers hot with your favorite sides like fries, onion rings, or a fresh salad.
