Ingredients

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon nutmeg

¾ cup unsalted butter, softened

1 cup granulated sugar

½ cup brown sugar, packed

3 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1 cup rolled oats

1 cup mixed berries (blueberries, raspberries, and chopped strawberries)

Zest of 1 lemon

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

½ teaspoon vanilla extract

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan to ensure your cake comes out easily.

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.

Alternately add the dry mixture and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.

Gently fold in the rolled oats and mixed berries until evenly distributed throughout the batter.

Pour the batter into the prepared Bundt pan, smoothing the top with a spatula.

Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.

For the glaze, whisk together powdered sugar, milk, and vanilla extract in a small bowl until smooth. Drizzle over the cooled Bundt cake.

Slice, serve, and enjoy your delicious breakfast Bundt cake!
