2 cups all-purpose flour

1/2 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, melted and slightly cooled

1 cup buttermilk

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups fresh or frozen blueberries

Zest of 1 lemon (optional)

Extra sugar for topping (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined. If desired, add the lemon zest to the dry mixture.

      Blend Wet Ingredients: In another bowl, beat together the melted butter, buttermilk, eggs, and vanilla extract until fully combined.

        Combine Mixtures: Gradually pour the wet mixture into the dry ingredients, stirring gently. Be careful not to overmix; a few lumps are okay.

          Fold in Blueberries: Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.

            Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full. If desired, sprinkle a little extra sugar on top for a sweet crunch.
