Blackened Salmon with Creamy Dijon Sauce

4 salmon fillets (about 6 oz each)

2 tablespoons paprika

1 tablespoon smoked paprika

1 teaspoon cayenne pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and black pepper to taste

2 tablespoons olive oil

1 cup heavy cream

3 tablespoons Dijon mustard

1 tablespoon lemon juice

1 tablespoon fresh dill, chopped (for garnish)

Prepare the spice mix: In a small bowl, combine paprika, smoked paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, salt, and black pepper. Mix well.

    Season the salmon: Pat the salmon fillets dry with paper towels. Rub the spice mixture generously over the flesh side of each salmon fillet, ensuring they're well coated.

      Pan-sear the salmon: Heat the olive oil in a large skillet over medium-high heat. Once hot, carefully add the salmon fillets, skin-side down first. Cook for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 2-3 minutes on the flesh side until it is cooked through and blackened, with a slightly charred appearance. Remove the salmon from the skillet and set aside.

        Make the creamy Dijon sauce: In the same skillet, reduce the heat to medium and add the heavy cream. Scrape any leftover bits from the bottom of the pan for flavor. Stir in the Dijon mustard and lemon juice, and let simmer for about 3-4 minutes until the sauce thickens slightly. Adjust seasoning with salt and pepper to taste.

          Serve: Plate the blackened salmon and drizzle generously with the creamy Dijon sauce. Garnish with fresh dill before serving.
