Black Pepper Chicken

1 lb (450g) chicken breast, sliced into thin strips

2 tablespoons black pepper, freshly ground

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

4 cloves garlic, minced

1-inch piece of ginger, grated

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

1 tablespoon sesame oil

Salt to taste

Chopped green onions for garnish

Instructions
 

In a mixing bowl, combine the sliced chicken with soy sauce, oyster sauce, cornstarch, and half of the ground black pepper. Marinate for about 30 minutes.

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until the chicken is cooked through and browned. Remove from the skillet and set aside.

      In the same skillet, add a little more oil if necessary, then add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant.

        Add the sliced onions, red bell pepper, and green bell pepper to the skillet. Stir-fry for about 3-4 minutes, until the vegetables are tender-crisp.

          Return the cooked chicken to the skillet, sprinkle the remaining black pepper, and drizzle with sesame oil. Toss everything together to combine well, seasoning with salt to taste.

            Remove from heat, garnish with chopped green onions, and serve hot.
