Ingredients
  

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup unsalted cashews

1 red bell pepper, diced

1 green bell pepper, diced

1 cup broccoli florets

3 green onions, chopped

3 cloves garlic, minced

1 inch ginger, grated

1/4 cup soy sauce (or tamari for gluten-free)

3 tbsp honey (or maple syrup for a vegan option)

2 tbsp rice vinegar

2 tbsp cornstarch

2 tbsp vegetable oil

Salt and pepper to taste

Cooked white or brown rice for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces, 2 tablespoons of soy sauce, and cornstarch. Mix well and let marinate for at least 20 minutes. This will help tenderize the chicken and create a nice coating.

    Prepare the Sauce: In a separate bowl, whisk together the remaining soy sauce, honey, rice vinegar, minced garlic, and grated ginger until well combined. Set aside.

      Sauté the Chicken: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the marinated chicken and season with salt and pepper. Cook for about 5-7 minutes, stirring frequently, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Stir-Fry the Vegetables: In the same skillet, add another tablespoon of oil if necessary. Stir in the diced red and green bell peppers and broccoli florets. Sauté the vegetables for about 3-4 minutes until they are vibrant and slightly tender.

          Combine: Return the cooked chicken to the skillet. Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything and cook for an additional 2-3 minutes until the sauce thickens slightly and everything is heated through.

            Add Cashews: Stir in the cashews and chopped green onions, cooking for another minute to mix and warm them through.
