Ingredients

3 ripe bananas, mashed

1 cup crushed pineapple, drained

1/2 cup shredded coconut (sweetened or unsweetened based on preference)

1/2 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 3/4 cups all-purpose flour

1/2 teaspoon ground cinnamon (optional)

1/2 cup chopped walnuts or macadamia nuts (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with non-stick spray or line it with parchment paper.

Mix the Wet Ingredients: In a large bowl, combine the softened butter with the brown sugar and granulated sugar. Beat with an electric mixer until creamy. Add in the mashed bananas, crushed pineapple, eggs, and vanilla extract. Mix until everything is well blended.

Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon (if using).

Combine Mixtures: Gradually add the dry ingredients into the wet mixture. Stir gently until just combined. Be careful not to overmix—it's okay if a few lumps remain.

Add Coconut and Nuts: Fold in the shredded coconut and, if using, the chopped walnuts or macadamia nuts. This adds delicious texture and flavor!

Pour and Bake: Pour the batter into the prepared loaf pan, spreading it out evenly. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted in the center comes out clean.

Cool: Once baked, remove the banana bread from the oven and let it cool in the pan for about 10-15 minutes. Then, transfer it to a wire rack to cool completely.

Serve: Slice and serve warm or at room temperature. This tropical delight is perfect on its own or slathered with butter!
