BBQ Chicken Quesadilla

Ingredients
  

2 cups shredded cooked chicken

1 cup BBQ sauce (your choice of flavor)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

4 large flour tortillas

1 tablespoon olive oil

½ cup sliced green onions (for garnish)

½ cup chopped fresh cilantro (for garnish)

Salsa and sour cream (for serving)

Instructions
 

In a medium bowl, combine the shredded chicken with BBQ sauce, mixing well until the chicken is fully coated.

    Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

      Place one tortilla in the skillet and sprinkle half of the mozzarella and cheddar cheese evenly across the surface.

        Spoon half of the BBQ chicken mixture over the cheese and top with more cheese.

          Place a second tortilla on top and cook for about 3-4 minutes or until the bottom tortilla is golden brown and the cheese starts to melt.

            Carefully flip the quesadilla using a large spatula, and cook the other side for another 3-4 minutes until golden and crispy.

              Once cooked, transfer to a cutting board and let it cool for a minute before cutting it into wedges.

                Repeat the process with the remaining ingredients for the second quesadilla.

                  Serve warm, garnished with sliced green onions and cilantro, along with salsa and sour cream on the side.
