BBQ Chicken Grilled Cheese

2 cups cooked chicken, shredded

1/2 cup BBQ sauce (your favorite brand)

4 slices of sourdough bread

1 cup sharp cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1/4 cup red onion, thinly sliced

2 tablespoons butter

Fresh cilantro or parsley for garnish (optional)

Mix the Chicken and BBQ Sauce: In a medium mixing bowl, combine the shredded chicken with the BBQ sauce. Ensure that the chicken is well coated.

    Prepare the Bread: Take the slices of sourdough bread and spread butter evenly on one side of each slice.

      Assemble the Sandwich: On the non-buttered side of two slices of bread, layer half of the mixed chicken evenly. Next, sprinkle half of the cheddar and Monterey Jack cheese over the chicken. Add some red onion slices, then top with the remaining BBQ chicken and finish with the rest of the cheese. Place another slice of sourdough on top, buttered side facing out.

        Grill the Sandwich: Heat a skillet or griddle over medium heat. Place the assembled sandwich in the skillet and cook for about 4-5 minutes or until golden brown.
