Ingredients
  

2 boneless chicken breasts

1 cup cornstarch

2 cups vegetable oil (for frying)

Salt and pepper, to taste

1 cup cooked jasmine rice

1 cup mixed greens (spinach, arugula, etc.)

1/2 cup shredded carrots

1/2 cup diced cucumber

1 avocado, sliced

1/4 cup green onions, chopped

Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

1 teaspoon garlic powder

1 teaspoon lime juice

Prepare the Chicken: Season the chicken breasts with salt and pepper. Dredge them in cornstarch until fully coated, shaking off excess.

    Fry the Chicken: In a deep skillet or frying pan, heat the vegetable oil over medium-high heat. Once hot, add the chicken breasts. Fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and place on a paper towel to absorb excess oil. Once slightly cooled, slice into strips.

      Make the Bang Bang Sauce: In a mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, garlic powder, and lime juice. Mix well until smooth. Adjust seasoning to taste. Add more sriracha for extra heat, if desired.

        Assemble the Bowl: Start with a base of cooked jasmine rice, then layer on the mixed greens, sliced chicken, shredded carrots, diced cucumber, and avocado.

          Drizzle the Sauce: Generously drizzle the Bang Bang sauce over the assembled bowl, and top with chopped green onions for garnish.
