Bananas Foster French Toast with Homemade Banana Bread

For the Banana Bread:

3 ripe bananas, mashed

1/3 cup melted butter

1 teaspoon baking soda

Pinch of salt

1 teaspoon vanilla extract

1 cup sugar (or to taste)

1 large egg, beaten

1 cup all-purpose flour

1/2 teaspoon ground cinnamon (optional)

1/2 cup chopped walnuts or pecans (optional)

For the Bananas Foster Topping:

2 tablespoons unsalted butter

1/4 cup brown sugar

1/2 teaspoon ground cinnamon

2 ripe bananas, sliced

1/4 cup dark rum (optional)

1/4 cup heavy cream

1/2 teaspoon vanilla extract

For the French Toast:

4 slices of the homemade banana bread

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Pinch of salt

Instructions
 

Step 1: Make the Banana Bread

    Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.

      In a mixing bowl, combine the mashed bananas and melted butter.

        Stir in baking soda and salt. Let it sit for a few minutes.

          Mix in the vanilla extract and sugar, followed by the beaten egg.

            Stir in the flour, cinnamon, and optional nuts until just combined.

              Pour the batter into the prepared loaf pan and smooth the top.

                Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool before slicing.

                  Step 2: Prepare the Bananas Foster Topping

                    In a skillet over medium heat, melt the butter and brown sugar, stirring until bubbly.

                      Sprinkle in the cinnamon, then add the sliced bananas.

                        Cook for about 2 minutes until bananas are softened, then carefully add the dark rum (if using) and ignite with a long lighter for a flambé effect (be cautious!).

                          Stir in the heavy cream and vanilla extract, then reduce the heat to low and allow the sauce to thicken slightly.

                            Step 3: Make the French Toast

                              In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and salt.

                                Heat a skillet or griddle over medium heat and coat with a bit of butter or oil.

                                  Dip each slice of banana bread into the egg mixture, allowing it to soak for a few moments on each side.

                                    Cook the soaked slices on the skillet for 2-3 minutes on each side until golden brown.

                                      Step 4: Assemble and Serve

                                        Serve the French toast warm, topped generously with the warm Bananas Foster sauce.

                                          Optionally, drizzle with maple syrup and sprinkle with powdered sugar.

                                            Garnish with additional banana slices and nuts if desired.
