2 ripe bananas, mashed

1 cup rolled oats

1/2 cup whole wheat flour

1/2 cup blueberries (fresh or frozen)

1/4 cup honey or maple syrup

1/4 cup almond butter (or peanut butter)

1 tsp vanilla extract

1/2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

1/4 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.

    Combine Wet Ingredients: In a large bowl, mix the mashed bananas, honey (or maple syrup), almond butter, and vanilla extract until well combined.

      Mix Dry Ingredients: In another bowl, combine the rolled oats, whole wheat flour, baking powder, cinnamon, and salt.

        Combine Mixtures: Gradually add the dry ingredients into the wet ingredients, stirring until just combined. The dough will be thick but sticky.

          Fold in Blueberries: Gently fold in the blueberries and chopped walnuts or pecans if using, being careful not to crush the berries.

            Scoop Cookies: Using a tablespoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, leaving space between each cookie as they will spread slightly.
