Ingredients

6 large eggs

1 cup milk

1 cup all-purpose flour

1/4 teaspoon salt

1 teaspoon vanilla extract

1/4 cup unsalted butter (plus extra for greasing)

Powdered sugar (for serving)

Fresh fruits (like berries or bananas, optional)

Maple syrup (optional)

Instructions

Preheat your oven: Preheat your oven to 425°F (220°C). Place a cast-iron skillet or a large baking dish inside to heat up.

Blend the batter: In a mixing bowl, whisk together the eggs, milk, flour, salt, and vanilla extract until smooth. You can also use a blender for this to ensure there are no lumps.

Prepare the skillet: Carefully remove the hot skillet from the oven (use oven mitts!), and add the 1/4 cup of unsalted butter. Swirl the pan around to melt the butter and coat the bottom and sides.

Pour in the batter: Once the butter has melted and is sizzling, pour the prepared batter into the skillet. It should start to bubble slightly upon contact with the hot butter.

Bake: Place the skillet back in the oven and bake for about 20-25 minutes, or until the pancake puffs up and turns golden brown.

Serve immediately: Remove from the oven. The pancake will deflate slightly as it cools. Dust with powdered sugar and serve with fresh fruits and maple syrup, if desired.

Enjoy your creation! Slice into wedges and savor this delightful fluffy treat.
