Ingredients
  

1 block (about 8 oz) of feta cheese

3 cups cherry tomatoes, halved

1/2 cup extra virgin olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

12 oz pasta (penne or fusilli works well)

Fresh basil leaves, for garnish

Zest of 1 lemon

1/4 cup grated Parmesan cheese (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a 9x13-inch baking dish, combine the halved cherry tomatoes, minced garlic, red pepper flakes, salt, and black pepper. Drizzle with half of the olive oil and toss to coat.

      Create a small well in the center of the tomatoes and place the block of feta cheese there. Drizzle the remaining olive oil over the feta cheese and season with a pinch of salt and pepper.

        Bake the dish in the preheated oven for 25-30 minutes, or until the tomatoes are bursting and the feta is golden and slightly melted.

          While the feta and tomatoes are baking, cook the pasta according to package instructions in salted water until al dente. Reserve 1 cup of pasta water, then drain the pasta.

            Once baked, remove the dish from the oven and carefully stir the feta and tomatoes together, creating a creamy sauce. If the mixture is too thick, gradually add some reserved pasta water until you reach the desired consistency.

              Add the cooked pasta to the feta and tomato mixture, tossing gently to combine. Add the lemon zest and adjust seasoning with salt and pepper if needed.

                Serve hot, garnished with fresh basil leaves and a sprinkling of grated Parmesan cheese if desired.
