Baked Boursin Spaghetti Squash

This Baked Boursin Spaghetti Squash recipe is a delicious and healthy twist on traditional pasta dishes. Ingredients
  

1 medium spaghetti squash

1 package (5.2 oz) Boursin cheese (garlic & herb flavor)

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds.

      Drizzle the inside of each half with olive oil, and season with garlic powder, onion powder, salt, and pepper.

        Place the squash halves cut-side down on a baking sheet lined with parchment paper. Bake in the preheated oven for 30-35 minutes, or until the flesh is tender and can be easily scraped with a fork.

          While the squash is baking, in a medium bowl, combine the Boursin cheese, halved cherry tomatoes, chopped spinach, and a pinch of salt and pepper. Mix well to combine.

            Once the spaghetti squash is done, remove it from the oven and let it cool slightly.

              Using a fork, scrape the insides of the squash to create spaghetti-like strands.

                In a large bowl, mix the spaghetti squash strands with the Boursin mixture until well combined.

                  Spoon the mixture back into the squash halves, distributing it evenly.

                    Return the filled squash halves to the baking sheet and bake for an additional 10-15 minutes or until everything is heated through and slightly golden on top.

                      Remove from the oven, garnish with fresh basil leaves if desired, and serve immediately.
