1 cup corn kernels (fresh, canned, or frozen)

1 lime, juiced

3 tablespoons olive oil

1 teaspoon honey (optional)

Salt and pepper to taste

1/4 cup feta cheese, crumbled (optional)

1/4 cup pumpkin seeds or sunflower seeds for crunch

Instructions
 

Prep the Ingredients: In a large mixing bowl, combine the diced avocados, halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
