1 cup all-purpose flour

1/3 cup warm water

1/2 tsp salt

200g ground pork (or chicken)

1/4 cup finely chopped scallions

2 tbsp soy sauce

1 tbsp minced ginger

1 tbsp minced garlic

1 tsp sesame oil

1 tbsp chili paste (adjust to taste)

4 cups chicken or vegetable broth

1 cup bok choy, chopped

1 medium carrot, julienned

Fresh cilantro for garnish

Sliced red chili for garnish (optional)

Instructions
 

Make the Dumpling Dough: In a large mixing bowl, combine the flour and salt. Gradually add the warm water while stirring with a fork until the dough comes together. Knead on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling: In another bowl, mix the ground pork (or chicken), chopped scallions, soy sauce, ginger, garlic, sesame oil, and chili paste. Stir until well combined.

      Form the Dumplings: After resting, divide the dough into small portions. Roll each piece into a thin circle (about 3 inches in diameter). Place a teaspoon of the filling in the center, then fold the dough over and pinch the edges to seal tightly. Repeat with remaining dough and filling.

        Make the Soup: In a large pot, bring the chicken or vegetable broth to a gentle simmer. Add the chopped bok choy and julienned carrots, cooking until tender.

          Cook the Dumplings: Carefully add the dumplings to the simmering broth. Cook for about 5-7 minutes or until they float to the surface and are cooked through.

            Serve: Ladle the dumpling soup into bowls, garnishing with fresh cilantro and sliced red chili if desired. Adjust seasoning with salt or additional chili paste to taste.
