4 medium-sized starchy potatoes (like Russets)

1 small onion, finely grated

1 large egg

3 tablespoons all-purpose flour

1 teaspoon baking powder

Instructions
 

Prep the Potatoes: Begin by peeling the potatoes and soaking them in cold water to reduce oxidation.

    Grate the Potatoes: Using a box grater or a food processor, grate the potatoes coarsely. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible.

      Combine Ingredients: In a large mixing bowl, combine the grated potatoes, finely grated onion, egg, flour, baking powder, salt, and pepper. Mix well until the ingredients are evenly incorporated.

        Heat Oil: In a large skillet, pour enough oil to cover the bottom (about 1/4 inch deep) and heat over medium-high heat until hot.

          Fry the Pancakes: Using a spoon, drop dollops of the potato mixture into the hot oil, flattening them slightly with the back of the spoon to form pancakes about 1/2 inch thick. Work in batches to avoid overcrowding.
