Ingredients

1 pound ground beef (preferably 80% lean)

1 tablespoon vegetable oil

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 cup bell peppers, finely chopped (red and yellow for color)

1 cup mushrooms, finely chopped

3 green onions, sliced

3 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon sriracha (adjust for spice level)

1 head of butter or iceberg lettuce, leaves separated

Chopped cilantro, for garnish

Chopped peanuts, for optional topping

Instructions

Cook the Beef: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

Add Aromatics: Once the beef is cooked, add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.

Incorporate Vegetables: Add the chopped bell peppers, mushrooms, and half of the sliced green onions to the skillet. Cook for another 4-5 minutes until the vegetables are tender.

Flavor It Up: Stir in the soy sauce, hoisin sauce, rice vinegar, sesame oil, and sriracha. Mix thoroughly, cooking for an additional 2-3 minutes until everything is well coated in the sauce.

Prepare Lettuce Wraps: While the beef mixture is cooking, rinse and dry the lettuce leaves. Choose the largest and most intact leaves as they will serve as your wrap.

Assemble and Serve: Remove the skillet from heat. Spoon the beef mixture into the center of each lettuce leaf. Top with remaining green onions, chopped cilantro, and peanuts if desired. Serve immediately while warm.
