4 chicken thighs (bone-in, skin-on)

3 cloves garlic, minced

1 tablespoon smoked paprika

1 tablespoon ground cumin

1 teaspoon dried oregano

2 tablespoons olive oil

Juice of 1 lime

Zest of 1 lime

Salt and pepper to taste

For the Sautéed Lemon Zucchini:

2 medium zucchinis, sliced into half-moons

1 tablespoon olive oil

2 cloves garlic, minced

Juice of ½ lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Marinate the Chicken: In a large bowl, combine minced garlic, smoked paprika, ground cumin, dried oregano, olive oil, lime juice, lime zest, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or preferably overnight for the best flavor.

    Cook the Chicken: Preheat your grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and place it skin-side down on the grill. Cook for about 7-10 minutes per side, or until the internal temperature reaches 165°F (75°C) and the skin is crispy and caramelized. Allow the chicken to rest for a few minutes before serving.

      Sauté the Zucchini: While the chicken is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
