4 lbs pork shoulder, bone-in

2 cups apple cider

1 large onion, sliced

4 cloves garlic, minced

2 cups chicken or vegetable broth

2 tbsp apple cider vinegar

2 tbsp brown sugar

1 tsp ground cinnamon

1 tsp ground cumin

1 tsp smoked paprika

1 tsp salt

½ tsp black pepper

2 tbsp olive oil

Fresh thyme sprigs for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 300°F (150°C).

    Prepare the Pork Shoulder: Pat the pork shoulder dry with paper towels and season generously with salt, black pepper, ground cumin, cinnamon, and smoked paprika.

      Sear the Pork: In a large Dutch oven, heat the olive oil over medium-high heat. Once hot, add the pork shoulder, searing each side until browned, roughly 4-5 minutes per side. Remove the pork from the pot and set aside.

        Sauté Aromatics: In the same pot, add sliced onions and minced garlic. Sauté for about 4-5 minutes until softened and fragrant.

          Deglaze the Pot: Add the apple cider to the pot, scraping the bottom to remove any browned bits. Stir in the apple cider vinegar, brown sugar, and chicken broth. Bring to a simmer.

            Braise the Pork: Return the seared pork shoulder to the pot, ensuring it is mostly submerged in the liquid. Cover the pot with a lid and transfer it to the preheated oven.

              Cook Low and Slow: Braise in the oven for about 3-4 hours, or until the pork is fork-tender and falls apart easily.

                Finish and Serve: Once cooked, remove the pork shoulder from the oven. Let it rest for 15 minutes before shredding with forks. Serve with the braising liquid drizzled over the top and garnish with fresh thyme if desired.
