3 tablespoons olive oil

3 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon paprika

Skewers (soaked in water if wooden)

12 oz pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cup mozzarella balls, halved

1/2 cup fresh basil leaves, chopped

1/4 cup balsamic vinegar

3 tablespoons olive oil

Salt and pepper, to taste

1 lb ground turkey

1 tablespoon olive oil

1 packet taco seasoning

1/2 cup water

Taco shells

Toppings: shredded lettuce, diced tomatoes, avocado, sour cream, and shredded cheese

2 medium zucchinis, spiralized

1/2 cup basil pesto

1 tablespoon olive oil

1/4 cup cherry tomatoes, halved

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Instructions
 

In a large bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, paprika, salt, and pepper.

    Add the shrimp to the bowl and toss well to coat. Let marinate for 15 minutes.

      Preheat a grill or grill pan over medium-high heat.

        Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer.
