8 oz spaghetti or linguine

2 cups fresh spinach, washed and chopped

2 tablespoons olive oil

2 cloves garlic, minced

Zest and juice of 1 lemon

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Optional: Cherry tomatoes for garnish

Optional: Crushed red pepper flakes for heat

Instructions
 

Bring a large pot of salted water to a boil. Cook the spaghetti or linguine according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water and then drain the rest.

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant but not browned.

      Add the chopped spinach to the skillet and cook until wilted, stirring occasionally, about 3-4 minutes.

        Stir in the lemon zest and juice, mixing well. Season with salt and pepper to taste.

          Add the drained pasta to the skillet, tossing to combine with the spinach and garlic mixture. If the pasta seems dry, add a bit of the reserved pasta cooking water until the desired consistency is reached.

            Remove from heat and stir in the grated Parmesan cheese, mixing until everything is evenly coated.

              Serve immediately, garnished with cherry tomatoes if desired, and sprinkle with crushed red pepper flakes for an extra kick.
