200g udon noodles

3 tablespoons chili oil (store-bought or homemade)

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 spring onion, finely chopped

1 teaspoon toasted sesame seeds

1/4 cup fresh cilantro or basil, roughly chopped (optional)

Salt to taste

Chili flakes (optional, for extra heat)
